  • 1 pound boneless skinless chicken thighs
  • 1/2 cup buffalo sauce
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped green onions
  • 1 tablespoon olive oil
  • 2 cups chicken broth

Instructions

  1. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for about 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
  2. Sauté the garlic: In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
  3. Add liquids: Pour in the chicken broth, buffalo sauce, and heavy cream. Stir to combine and bring to a gentle simmer.
  4. Cook the pasta: Add rotini to the skillet and stir to coat. Simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is al dente and the liquid has reduced slightly.
  5. Stir in the cheese: Lower the heat and stir in the grated parmesan cheese until fully melted and creamy.
  6. Slice and return chicken: Slice the cooked chicken and place it back on top of the pasta. Let it warm through for 1–2 minutes.
  7. Garnish and serve: Sprinkle with chopped green onions. Serve hot straight from the skillet.
