- 1 medium green cabbage, shredded
- 1 pound ground chicken
- 1 large onion, finely diced
- 3 garlic cloves, minced
- 1 large egg
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
- In a bowl, mix ground chicken, egg, breadcrumbs, garlic, parsley, salt, pepper, and paprika. Shape into 1.5-inch meatballs.
- Add the meatballs to the skillet and cook for about 8 minutes, turning to brown all sides. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion until soft, about 4 minutes.
- Add shredded cabbage and cook until it begins to wilt, about 5 minutes.
- Return meatballs to the skillet, cover, and cook for 10 minutes until everything is cooked through and tender.
- Adjust seasoning if needed, sprinkle with fresh parsley, and serve warm.
Notes
- Chill the meatball mixture for 10 minutes if it’s too sticky to shape easily.
- Don’t skip browning the meatballs, it adds great flavor.
- Add a splash of broth if the cabbage starts sticking to the skillet.
- Great served with rice, mashed potatoes, or crusty bread.
