Description

A comforting one-pot chicken and orzo stew that is creamy, hearty, and full of tender chicken, vegetables, and cozy flavors, perfect for an easy weeknight dinner.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs, cut into large chunks
  • 1 cup dry orzo pasta
  • 4 cups chicken broth
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 0.75 cup heavy cream
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Season the chicken pieces evenly with salt and black pepper.
  2. Heat olive oil in a large pot over medium heat and add the chicken. Cook for 4 to 5 minutes, stirring occasionally, until lightly browned.
  3. Add the diced onion, chopped carrots, and chopped celery to the pot. Cook for 3 to 4 minutes until slightly softened.
  4. Stir in the minced garlic and dried oregano and cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth and bring the mixture to a gentle boil.
  6. Add the dry orzo pasta, reduce heat to a simmer, and cook for 10 to 12 minutes, stirring occasionally, until the orzo is tender.
  7. Lower the heat and slowly stir in the heavy cream. Simmer for 2 to 3 minutes until the stew becomes creamy.
  8. Remove from heat, sprinkle with fresh parsley, and serve warm.

Notes

  • Stir the orzo occasionally while cooking to prevent sticking.
  • If the stew thickens too much, add a small amount of warm broth to adjust consistency.
