- 1.5 pounds chicken thighs (boneless, skinless)
- 6 garlic cloves, minced
- 3/4 cup freshly grated parmesan cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning, then sear for 4–5 minutes per side until golden. Remove and set aside.
- Lower heat to medium and melt butter in the same pan. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth, scraping up brown bits from the pan. Stir in heavy cream and parmesan until smooth and creamy.
- Return chicken to the skillet, reduce heat to low, cover, and simmer for 10–12 minutes until cooked through.
- Uncover, stir sauce gently, and simmer another 2 minutes to thicken slightly.
- Garnish with fresh parsley and serve hot.
Notes
- Use freshly grated parmesan for a smooth, creamy sauce.
- Add a pinch of red pepper flakes for a little kick.
- If sauce gets too thick, add a splash of cream or broth to loosen it up.
- Makes great leftovers for lunch the next day.
