Description

A rich and comforting one pot creamy honey mustard chicken and rice made with tender chicken thighs, fluffy rice, and a velvety honey Dijon sauce. Perfect for busy weeknights and satisfying family dinners.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs (about 6 pieces)
  • 1 cup long grain white rice, uncooked
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large skillet or Dutch oven over medium heat and allow it to warm for a couple of minutes.
  2. In a small bowl, stir together the Dijon mustard and honey until smooth and set aside.
  3. Add olive oil to the hot pan. Season the chicken with salt and black pepper, then sear for 4 to 5 minutes per side until golden. Remove and set aside.
  4. In the same pot, add chopped onion and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds. Add the uncooked rice and toast for 1 minute. Pour in chicken broth and heavy cream, then stir in the honey mustard mixture. Return the chicken to the pot, nestling it into the rice.
  5. Cover and simmer on low heat for 18 to 20 minutes, until the rice is tender and the chicken is fully cooked to an internal temperature of 165 degrees Fahrenheit.
  6. Remove from heat and let rest for 5 minutes to allow the sauce to thicken.
  7. Sprinkle with fresh parsley and serve warm with extra sauce spooned over the top.

Notes

  • For extra flavor, lightly toast the rice before adding liquids.
  • If the rice seems slightly undercooked, add a splash of broth and cook a few more minutes covered.
  • Leftovers reheat best with a small splash of broth or cream to loosen the sauce.
