- 680 g chicken thighs
- 240 g orzo pasta
- 720 ml chicken broth
- 2 medium lemons
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves
- 1 medium onion
- 2 tablespoons fresh parsley
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Season the chicken thighs evenly with salt and black pepper on both sides.
- Heat olive oil in a large skillet or wide pot over medium heat.
- Sear the chicken thighs until golden on both sides, about 4 minutes per side, then remove and set aside.
- Add butter to the same pot, followed by the chopped onion and garlic, and cook until soft and fragrant.
- Stir in the orzo pasta and let it toast lightly for about 1 minute.
- Pour in the chicken broth and add sliced lemons.
- Return the chicken to the pot, nestling it into the orzo.
- Simmer gently until the orzo is tender and the chicken is fully cooked, about 15 minutes.
- Finish with fresh lemon juice and sprinkle with chopped parsley before serving.
Notes
- Stir the orzo occasionally to prevent sticking.
- Add extra broth if a creamier texture is desired.
- Finish with extra lemon juice for brighter flavor.
