Description

Creamy, comforting one-pot lemon chicken orzo with tender chicken, bright citrus flavor, and a rich, silky texture that comes together easily in one pan.


Ingredients

  • 680 g chicken thighs
  • 240 g orzo pasta
  • 720 ml chicken broth
  • 2 medium lemons
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves
  • 1 medium onion
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Season the chicken thighs evenly with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet or wide pot over medium heat.
  3. Sear the chicken thighs until golden on both sides, about 4 minutes per side, then remove and set aside.
  4. Add butter to the same pot, followed by the chopped onion and garlic, and cook until soft and fragrant.
  5. Stir in the orzo pasta and let it toast lightly for about 1 minute.
  6. Pour in the chicken broth and add sliced lemons.
  7. Return the chicken to the pot, nestling it into the orzo.
  8. Simmer gently until the orzo is tender and the chicken is fully cooked, about 15 minutes.
  9. Finish with fresh lemon juice and sprinkle with chopped parsley before serving.

  • Stir the orzo occasionally to prevent sticking.
  • Add extra broth if a creamier texture is desired.
