Description

  • 1 pound fresh asparagus, ends trimmed
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1/3 cup grated parmesan cheese
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment or foil.
  2. In a large bowl, toss asparagus and cherry tomatoes with olive oil, garlic powder, salt, and pepper until well coated.
  3. Spread the mixture in a single layer on the baking sheet, ensuring the vegetables do not overlap.
  4. Sprinkle grated parmesan cheese evenly over the top.
  5. Roast in the preheated oven for 15 to 18 minutes, or until the asparagus is tender and the tomatoes are blistered.
