- 2 cups boneless, skinless cooked chicken, chopped
- 1 cup dry orzo pasta
- 2 fresh peaches, thinly sliced
- 1 cup mozzarella pearls
- 1/2 cup fresh basil leaves, chopped
- 1/4 red onion, thinly sliced
- 3/4 cup corn kernels (fresh or thawed)
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Boil the orzo in salted water according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine orzo, peaches, chicken, mozzarella, red onion, and corn.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Gently toss everything to combine evenly.
- Fold in chopped basil leaves just before serving.
- Let the salad sit for 10 minutes to allow flavors to meld. Serve chilled or at room temperature.

- Use ripe but firm peaches to prevent them from getting mushy.
