Description

This Peach & Basil Chicken Orzo Salad is a fresh and flavorful mix of tender chicken, juicy peaches, creamy mozzarella, and vibrant basil tossed with orzo for a perfect summer meal.


Ingredients

  • 2 cups boneless, skinless cooked chicken, chopped
  • 1 cup dry orzo pasta
  • 2 fresh peaches, thinly sliced
  • 1 cup mozzarella pearls
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 red onion, thinly sliced
  • 3/4 cup corn kernels (fresh or thawed)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Boil the orzo in salted water according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine orzo, peaches, chicken, mozzarella, red onion, and corn.
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  4. Gently toss everything to combine evenly.
  5. Fold in chopped basil leaves just before serving.
