Description

A rustic peach galette filled with juicy cinnamon-spiced peaches baked inside a flaky buttery crust and served warm with vanilla ice cream.


Ingredients

  • 4 medium peaches, thinly sliced
  • 1 1/4 cups all purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/3 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons ice water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 large egg, beaten
  • 1 tablespoon coarse sugar
  • Vanilla ice cream for serving

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, cornstarch, and vanilla extract until evenly coated.
  3. In another bowl, mix the flour and salt. Cut in the cold butter until the mixture becomes crumbly. Add the ice water gradually until a dough forms.
  4. Roll the dough into a circle on a lightly floured surface and transfer it to the prepared baking sheet.
  5. Arrange the peach filling in the center of the dough, leaving a 2 inch border around the edges.
  6. Fold the dough edges gently over the peaches.
  7. Brush the crust with beaten egg and sprinkle coarse sugar over the edges.
  8. Bake for 35 to 40 minutes until the crust is golden brown and the peaches are bubbling.
  9. Allow the galette to cool slightly before slicing.
  10. Serve warm with vanilla ice cream.
