- 4 medium peaches, thinly sliced
- 1 1/4 cups all purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/3 cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch

- 3 to 4 tablespoons ice water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 large egg, beaten
- 1 tablespoon coarse sugar
- Vanilla ice cream for serving
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, cornstarch, and vanilla extract until evenly coated.
- In another bowl, mix the flour and salt. Cut in the cold butter until the mixture becomes crumbly. Add the ice water gradually until a dough forms.
- Roll the dough into a circle on a lightly floured surface and transfer it to the prepared baking sheet.
- Arrange the peach filling in the center of the dough, leaving a 2 inch border around the edges.
- Fold the dough edges gently over the peaches.
- Brush the crust with beaten egg and sprinkle coarse sugar over the edges.
- Bake for 35 to 40 minutes until the crust is golden brown and the peaches are bubbling.
- Allow the galette to cool slightly before slicing.
- Serve warm with vanilla ice cream.
