- 2 medium ripe bananas, mashed
- 1 cup creamy peanut butter
- 1 cup rolled oats
- 1/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, mash the bananas until smooth.
- Add peanut butter, brown sugar, eggs, and vanilla extract, then mix until well combined.
- Stir in rolled oats, baking soda, and salt until everything is evenly incorporated.
- Scoop portions of dough onto the prepared baking sheet and gently flatten each one.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Allow cookies to cool slightly before serving.
Notes
- Use very ripe bananas for the best natural sweetness.
- Do not overbake to keep the cookies soft.
- Let cookies rest before transferring to prevent breaking.
