Soft and chewy cookies made with ripe bananas and creamy peanut butter, naturally sweet and incredibly comforting with every bite.

Ingredients

Scale
  • 2 medium ripe bananas, mashed
  • 1 cup creamy peanut butter
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add peanut butter, brown sugar, eggs, and vanilla extract, then mix until well combined.
  4. Stir in rolled oats, baking soda, and salt until everything is evenly incorporated.
  5. Scoop portions of dough onto the prepared baking sheet and gently flatten each one.
  6. Bake for 10 to 12 minutes until edges are lightly golden.
  7. Allow cookies to cool slightly before serving.

Notes

  • Use very ripe bananas for the best natural sweetness.
  • Do not overbake to keep the cookies soft.
