Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, and baking soda until smooth.
- Prepare the baking sheet with parchment paper.
- Roll dough into small balls, place on the baking sheet, and press a thumbprint into the center of each. Fill each indentation with jam.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Allow cookies to cool slightly on the baking sheet before transferring.
- Serve and enjoy warm or at room temperature.
