Description

This Pepper Steak Stir Fry brings together tender slices of beef, crisp bell peppers, and a glossy, savory sauce for a quick and flavorful meal. It’s the perfect weeknight dinner that feels like takeout but tastes even better.

Ingredients

Scale
  • 1 pound flank steak, thinly sliced against the grain
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1/3 cup beef broth
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

Instructions

  1. Heat a large skillet or wok over high heat until very hot. Add 1 tablespoon of vegetable oil.
  2. In a small bowl, mix soy sauce, brown sugar, beef broth, cornstarch, garlic, and ginger until smooth.
  3. Cook half of the steak in the skillet for about 2 minutes per side. Remove and repeat with remaining steak.
  4. Lower heat to medium-high. Add remaining oil and sauté bell peppers for 3 to 4 minutes until slightly tender.
  5. Return steak to the skillet. Pour in the sauce and toss to coat. Let it simmer for 2 to 3 minutes until sauce thickens.
  6. Garnish with green onions or sesame seeds if desired. Serve hot over rice or noodles.

Notes

  • Slice the beef thin and against the grain for the most tender result.
  • Don’t overcrowd the pan—cook the beef in batches if needed.
  • Prep all ingredients before you start cooking since stir fry moves fast.
