- 2 large turkey breasts (about 1.5 pounds total)
- 1 cup pomegranate juice
- 3 garlic cloves, minced
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 sprigs fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F. Heat a skillet on medium-high heat.
- In a small saucepan, combine pomegranate juice, honey, Dijon mustard, garlic, rosemary, salt, and pepper. Bring to a simmer and cook for 10–12 minutes until reduced by half and thickened.
- Heat olive oil in the skillet. Sear turkey breasts for 3–4 minutes on each side until golden.
- Pour half the glaze over the turkey. Transfer the skillet to the oven or move the turkey to a baking dish and cover with glaze.
- Roast for 20–25 minutes or until internal temperature reaches 165°F. Baste with remaining glaze halfway through.
- Remove from oven, tent with foil, and let rest for 5–10 minutes. Drizzle with reserved glaze.
- Serve hot with your favorite sides.
