- 4 medium potatoes, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- 2 sprigs fresh rosemary, optional
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss drumsticks with olive oil, garlic powder, paprika, salt, pepper, and rosemary.
- In another bowl, toss potato wedges with a bit of olive oil and salt.
- Arrange drumsticks on the baking sheet in a single layer with potatoes around them, ensuring space for even roasting.
- Roast for 35-40 minutes, flipping potatoes halfway through. Chicken is done when internal temperature reaches 165°F (74°C).
- Remove from oven and let chicken rest for 5 minutes.
- Plate the drumsticks and potatoes, drizzle pan juices over potatoes, and serve.

- Rotate your tray midway to ensure even browning.
- For extra crispy skin, broil for the last 2-3 minutes while watching carefully.
