Instructions
- Mash the boiled potatoes until smooth.
- Mix in flour, salt, pepper, and melted butter until combined.
- Form the mixture into small balls and gently flatten them into pillow shapes.
- Heat oil in a frying pan over medium-high heat until hot but not smoking.
- Fry the pillows in batches, turning until golden brown and crispy (about 3–4 minutes per side).
- Remove and drain on paper towels.
- Sprinkle with fresh parsley and serve hot.
