Description

These golden potato pillows are crispy on the outside, fluffy on the inside, and packed with comforting flavor. Perfect as a snack, appetizer, or side dish for any meal.

Ingredients

Scale
  • 4 medium potatoes, peeled and boiled
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Mash the boiled potatoes until smooth.
  2. Mix in flour, salt, pepper, and melted butter until combined.
  3. Form the mixture into small balls and gently flatten them into pillow shapes.
  4. Heat oil in a frying pan over medium-high heat until hot but not smoking.
  5. Fry the pillows in batches, turning until golden brown and crispy (about 3–4 minutes per side).
  6. Remove and drain on paper towels.
  7. Sprinkle with fresh parsley and serve hot.

Notes

  • Use cold mashed potatoes for best texture.
  • Do not overwork the dough to keep the pillows light and airy.
  • Test one pillow first to ensure oil is at the right temperature.
