- 4 medium sweet potatoes
- 1 pound ground beef
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Place sweet potatoes on a baking tray, drizzle with olive oil, and roast for about 40 minutes until soft.
- While the potatoes roast, heat a skillet and cook the ground beef with garlic, onion, paprika, salt, and black pepper until browned and fragrant.
- Remove sweet potatoes from the oven, slice them open, and gently scoop out a small portion of the center.
- Fill each potato with the cooked beef mixture.
- Top with shredded mozzarella cheese.
- Return to the oven and bake until the cheese is melted and slightly golden.
- Remove from oven, sprinkle with fresh parsley, and serve warm.
