Description

These protein loaded sweet potato boats are a hearty and balanced meal, combining roasted sweet potatoes with a savory ground beef filling and melted cheese for a comforting and satisfying dish.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound ground beef
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place sweet potatoes on a baking tray, drizzle with olive oil, and roast for about 40 minutes until soft.
  3. While the potatoes roast, heat a skillet and cook the ground beef with garlic, onion, paprika, salt, and black pepper until browned and fragrant.
  4. Remove sweet potatoes from the oven, slice them open, and gently scoop out a small portion of the center.
  5. Fill each potato with the cooked beef mixture.
  6. Top with shredded mozzarella cheese.
  7. Return to the oven and bake until the cheese is melted and slightly golden.
  8. Remove from oven, sprinkle with fresh parsley, and serve warm.
