- 1/4 cup brown sugar

- 1 cup powdered sugar
- 1 tablespoon heavy cream
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, beat butter and granulated sugar until fluffy. Add egg and vanilla extract.
- Slowly mix dry ingredients into the wet ingredients until a soft dough forms.
- Scoop dough onto the baking sheet and gently flatten each cookie. Create a shallow indentation in the center.
- Mix pumpkin puree, brown sugar, cinnamon, and nutmeg in a separate bowl.
- Spoon a small amount of pumpkin filling into each cookie center.
- Bake for 12 to 14 minutes until edges are lightly golden.
- Cool completely before frosting.
- Beat cream cheese, powdered sugar, and heavy cream until smooth. Pipe frosting onto cooled cookies.
- Serve and enjoy.
Notes
- Chill the dough for 15 minutes if it feels too soft.
- Do not overfill the cookie centers with pumpkin filling.
- Store cookies in the refrigerator because of the cream cheese frosting.
- The cookies taste even better the next day after the flavors settle together.
