Ingredients

  • Prepared crepes, 4 large
  • Pizza sauce, 1 cup
  • Shredded mozzarella cheese, 2 cups
  • Cooked chicken pieces, 1 cup
  • Sliced black olives, 1/2 cup
  • Red bell pepper, 1 medium, diced
  • Fresh mushrooms, 1 cup, sliced
  • Olive oil, 1 tablespoon
  • Salt, 1/2 teaspoon
  • Black pepper, 1/4 teaspoon

Instructions

  1. Preheat the oven to 400°F and line a baking tray with parchment paper.
  2. In a bowl, combine the cooked chicken, mushrooms, red bell pepper, black olives, olive oil, salt, and black pepper.
  3. Lay the crepes flat on the prepared baking tray.
  4. Spread the pizza sauce evenly over each crepe.
  5. Sprinkle mozzarella cheese over the sauce.
  6. Add the prepared chicken and vegetable mixture evenly on top.
  7. Bake for 12 to 15 minutes until the cheese is melted and lightly golden.
