  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder

  • 8 ounces cream cheese, softened
  • 1/2 cup fresh raspberries
  • 1/4 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl whisk the melted butter and granulated sugar until smooth. Add the eggs and vanilla extract and mix until glossy and combined.
  3. In another bowl whisk together the flour, cocoa powder, and salt. Fold the dry ingredients into the wet mixture until just combined.
  4. Spread most of the brownie batter evenly into the prepared baking pan.
  5. In a small bowl mix the softened cream cheese until smooth.
  6. Spoon small dollops of the cream cheese mixture and raspberry jam over the brownie batter. Scatter the fresh raspberries across the top.
  7. Use a knife to gently swirl the cream cheese and raspberry jam into the brownie batter to create a marbled effect.
  8. Bake for about 30 minutes or until the center is set but still slightly soft.
  9. Allow the brownies to cool completely in the pan before slicing into squares.
