Description

Buttery oat bars layered with sweet and tangy raspberry jam, baked to golden perfection with a crumbly topping and a soft chewy base.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 1 cup raspberry jam
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a large bowl, mix rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Add the cold cubed butter and vanilla extract, then mix until the mixture becomes crumbly.
  4. Press about two thirds of the mixture firmly into the prepared pan to form the base.
  5. Spread the raspberry jam evenly over the base layer.
  6. Sprinkle the remaining oat mixture evenly on top of the jam.
  7. Bake for 30 minutes until the top is golden and the jam is slightly bubbling.
  8. Allow to cool completely before lifting out and cutting into bars.

Notes

  • Use good quality jam for the best flavor.
  • Let the bars cool fully before slicing to keep clean edges.
  • Store in an airtight container for up to 3 days at room temperature.
