- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 3/4 cup unsalted butter, cold and cubed
- 1 cup raspberry jam
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F and line an 8×8 baking pan with parchment paper.
- In a large bowl, mix rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt.
- Add the cold cubed butter and vanilla extract, then mix until the mixture becomes crumbly.
- Press about two thirds of the mixture firmly into the prepared pan to form the base.
- Spread the raspberry jam evenly over the base layer.
- Sprinkle the remaining oat mixture evenly on top of the jam.
- Bake for 30 minutes until the top is golden and the jam is slightly bubbling.
- Allow to cool completely before lifting out and cutting into bars.
Notes
- Use good quality jam for the best flavor.
- Let the bars cool fully before slicing to keep clean edges.
- Store in an airtight container for up to 3 days at room temperature.
