Description

A warm and comforting baked rhubarb crisp with a sweet and tangy fruit base topped with a golden, buttery oat crumble.


Ingredients

  • 4 cups rhubarb, chopped
  • 3/4 cup granulated sugar
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. In a bowl, mix chopped rhubarb with granulated sugar until evenly coated.
  3. Spread the rhubarb mixture evenly in the prepared baking dish.
  4. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold butter and mix until crumbly.
  5. Sprinkle the crumble mixture evenly over the rhubarb.
  6. Bake for 40 minutes until the topping is golden and the filling is bubbling.
  7. Let rest for 10 minutes before serving.
