- 4 cups rhubarb, chopped
- 3/4 cup granulated sugar
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- In a bowl, mix chopped rhubarb with granulated sugar until evenly coated.
- Spread the rhubarb mixture evenly in the prepared baking dish.
- In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold butter and mix until crumbly.
- Sprinkle the crumble mixture evenly over the rhubarb.
- Bake for 40 minutes until the topping is golden and the filling is bubbling.
- Let rest for 10 minutes before serving.
Notes
- Use fresh rhubarb for best flavor and texture
- Adjust sugar based on rhubarb tartness
- Do not skip resting time to allow filling to thicken
- Serve warm with ice cream or whipped cream
