  • 2 cooked salmon fillets, about 8 ounces total
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1 pound small potatoes
  • 1 cup green beans, trimmed
  • 1/3 cup black olives, pitted
  • 4 anchovy fillets
  • 3 cups romaine lettuce, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a medium saucepan of salted water to a boil. Add the small potatoes and cook for about 10 minutes until tender.
  2. Add the trimmed green beans to the same pot during the last 3 minutes of cooking so they stay crisp.
  3. Drain the potatoes and green beans and allow them to cool slightly.
  4. Place the eggs in a saucepan with water, bring to a gentle boil, then cook for about 9 minutes. Transfer to cold water, peel, and slice in half.
  5. In a small bowl whisk together olive oil, Dijon mustard, red wine vinegar, minced garlic, salt, and black pepper to create the dressing.
  6. Arrange chopped romaine lettuce on a large serving platter or bowl.
  7. Add the cooked potatoes, green beans, cherry tomatoes, black olives, and flaked salmon over the lettuce.
  8. Place the halved eggs around the salad and add anchovy fillets across the top.
  9. Drizzle the dressing evenly over the salad just before serving.
