Description

A buttery, garlicky shrimp dish cooked in a lemony sauce and finished with fresh parsley. Shrimp Scampi is quick, flavorful, and perfect for weeknights or special dinners.


Ingredients

  • 1 pound raw shrimp (large, tail-on)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil and 2 tablespoons of butter to the pan.
  3. Once melted, add garlic and red pepper flakes. Sauté for 30 seconds.
  4. Add shrimp in a single layer and cook for 1–2 minutes per side until pink and opaque.
  5. Add remaining butter, lemon zest, and lemon juice. Stir gently.
  6. Let the sauce simmer for 1–2 minutes to thicken slightly.
  7. Sprinkle with fresh parsley and toss to combine.
  8. Serve hot over pasta, rice, or with crusty bread.

Notes

  • Use fresh garlic for best flavor.
  • Don’t overcook shrimp, they cook quickly.
  • Double the sauce if serving over pasta.
  • For a creamier version, add a splash of heavy cream.
