- 1 pound lean ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 3/4 cup ketchup
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon yellow mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices thick-cut sandwich bread or Texas toast
- 4 slices cheddar cheese
- 1 cup shredded low-moisture mozzarella cheese
- 4 tablespoons unsalted butter, softened
Instructions
- Heat a large skillet over medium heat. Add the ground beef and diced onion, then cook for 6 to 8 minutes, breaking up the beef as it browns and letting the onion soften.
- Stir in the garlic and cook for 30 seconds.
- Add the ketchup, tomato paste, Worcestershire sauce, brown sugar, yellow mustard, salt, and black pepper. Stir well and simmer for 3 to 4 minutes until the filling is thick and glossy.
- Spread the softened butter on one side of each bread slice.
- Place 4 slices of bread butter-side down. Top each with 1 slice of cheddar cheese.
- Divide the sloppy joe filling evenly over the cheddar cheese.
- Sprinkle the shredded mozzarella evenly over the warm filling, then top with the remaining bread slices, butter-side up.
- Heat a nonstick or cast iron pan over medium-low heat. Cook the sandwiches for 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and crisp and the cheese is melted.
- Let the sandwiches rest for 1 minute, then slice and serve hot.

- Let the filling simmer until thick so the bread stays crisp.
- Use medium-low heat so the bread browns evenly while the cheese melts fully.
- Freshly shredded mozzarella gives the smoothest melt and best cheese pull.
- Leftover filling can be refrigerated for up to 3 days or frozen for up to 2 months.
