Description

A rich and comforting grilled cheese stuffed with thick sloppy joe filling, melted cheddar, and gooey mozzarella, all tucked between buttery golden slices of thick-cut bread.

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 3/4 cup ketchup
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices thick-cut sandwich bread or Texas toast
  • 4 slices cheddar cheese
  • 1 cup shredded low-moisture mozzarella cheese
  • 4 tablespoons unsalted butter, softened

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and diced onion, then cook for 6 to 8 minutes, breaking up the beef as it browns and letting the onion soften.
  2. Stir in the garlic and cook for 30 seconds.
  3. Add the ketchup, tomato paste, Worcestershire sauce, brown sugar, yellow mustard, salt, and black pepper. Stir well and simmer for 3 to 4 minutes until the filling is thick and glossy.
  4. Spread the softened butter on one side of each bread slice.
  5. Place 4 slices of bread butter-side down. Top each with 1 slice of cheddar cheese.
  6. Divide the sloppy joe filling evenly over the cheddar cheese.
  7. Sprinkle the shredded mozzarella evenly over the warm filling, then top with the remaining bread slices, butter-side up.
  8. Heat a nonstick or cast iron pan over medium-low heat. Cook the sandwiches for 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and crisp and the cheese is melted.
  9. Let the sandwiches rest for 1 minute, then slice and serve hot.

  • Let the filling simmer until thick so the bread stays crisp.
  • Use medium-low heat so the bread browns evenly while the cheese melts fully.
