Description

  • 2 large cucumbers, smashed into bite sized pieces
  • 8 ounces halloumi cheese, sliced and cut into star shapes
  • 6 radishes, thinly sliced
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Place the smashed cucumber pieces, sliced radishes, red onion, dill, and mint into a large mixing bowl.

  4. Arrange the halloumi star pieces in the skillet in a single layer.
  5. Sear the halloumi for about 2 to 3 minutes on each side until golden and lightly crisp.
