Description
A refreshing salad that combines smashed cucumbers, crisp radishes, fresh herbs, and golden pan seared halloumi stars. The contrast of cool vegetables and warm salty cheese creates a vibrant dish that works beautifully as a light meal or flavorful side.
Ingredients
Scale
- 2 large cucumbers, smashed into bite sized pieces
- 8 ounces halloumi cheese, sliced and cut into star shapes
- 6 radishes, thinly sliced
- 1/4 cup thinly sliced red onion
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a nonstick skillet over medium heat.
- Place the smashed cucumber pieces, sliced radishes, red onion, dill, and mint into a large mixing bowl.
- Add a small drizzle of olive oil to the skillet and allow it to warm.
- Arrange the halloumi star pieces in the skillet in a single layer.
- Sear the halloumi for about 2 to 3 minutes on each side until golden and lightly crisp.
- Whisk together the olive oil, lemon juice, salt, and black pepper, then toss with the vegetables in the bowl.
- Add the warm halloumi to the salad, transfer to a serving bowl, and serve immediately.
Notes
- Smashing the cucumbers creates rough edges that hold dressing better.
- Dry the halloumi before cooking to help it brown properly.
- Serve the cheese warm for the best contrast with the cool vegetables.
- Add an extra squeeze of lemon before serving for brighter flavor.
