Ingredients

  • 1 pound green beans, trimmed
  • 12 ounces smoked sausage, sliced
  • 1 pound baby potatoes, halved
  • 1 large white onion, thinly sliced
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 ½ cups low-sodium chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika

Instructions

  1. Wash and trim green beans, slice sausage, chop onion, and halve potatoes.
  2. Heat olive oil in a large skillet or Dutch oven over medium heat. Brown sausage slices on both sides, about 5–6 minutes. Remove and set aside.
  3. Add onion and garlic to the same pan. Cook for 3–4 minutes until softened and fragrant.
  4. Return sausage to the pan. Add green beans and potatoes. Stir to combine.
  5. Pour in chicken broth and season with salt, pepper, and smoked paprika. Stir well.
  6. Cover and reduce heat to low. Simmer for 25–30 minutes, or until beans and potatoes are tender.
  7. Taste and adjust seasoning if needed. Let rest for 5 minutes off the heat.
  8. Serve warm as a main dish or side.
