- 12 ounces (340 grams) snowflake pasta
- 2 tablespoons olive oil
- 3 cloves garlic, finely minced
- 1 can (14 ounces / 400 grams) crushed tomatoes
- 1 tablespoon tomato paste
- 1 cup (240 milliliters) heavy cream
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 cup (50 grams) grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Bring a large pot of generously salted water to a rolling boil.
- Heat olive oil in a deep skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in tomato paste and cook briefly, then add crushed tomatoes, salt, black pepper, and Italian seasoning. Simmer gently for 10 minutes.
- Cook the snowflake pasta according to package instructions until al dente, about 8 to 10 minutes. Reserve 1/2 cup of pasta water, then drain.
- Stir heavy cream into the sauce and simmer for 3 to 4 minutes.
- Add drained pasta to the sauce and toss gently to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
- Stir in grated Parmesan cheese until melted and smooth. Fold in fresh basil.
- Serve warm with extra Parmesan if desired.
Notes
- Reserve pasta water to adjust sauce consistency as needed.
- Do not overcook the pasta, it will continue to soften slightly in the sauce.
- Freshly grated Parmesan melts more smoothly than pre-grated cheese.
