Description

Delicate snowflake shaped pasta tossed in a creamy tomato garlic sauce with parmesan and fresh basil. Cozy, comforting, and perfect for an easy weeknight dinner that feels just a little special.


Ingredients

  • 12 ounces (340 grams) snowflake pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 1 can (14 ounces / 400 grams) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 cup (240 milliliters) heavy cream
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup (50 grams) grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Bring a large pot of generously salted water to a rolling boil.
  2. Heat olive oil in a deep skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in tomato paste and cook briefly, then add crushed tomatoes, salt, black pepper, and Italian seasoning. Simmer gently for 10 minutes.
  4. Cook the snowflake pasta according to package instructions until al dente, about 8 to 10 minutes. Reserve 1/2 cup of pasta water, then drain.
  5. Stir heavy cream into the sauce and simmer for 3 to 4 minutes.
  6. Add drained pasta to the sauce and toss gently to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
  7. Stir in grated Parmesan cheese until melted and smooth. Fold in fresh basil.
  8. Serve warm with extra Parmesan if desired.

Notes

  • Reserve pasta water to adjust sauce consistency as needed.
  • Do not overcook the pasta, it will continue to soften slightly in the sauce.
  • Freshly grated Parmesan melts more smoothly than pre-grated cheese.
