  • 2 tablespoons olive oil
  • 1 medium onion, finely diced

  • 1 red bell pepper, diced

  • 1 teaspoon dried thyme
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) tomato sauce
  • 1 cup vegetable broth
  • 1 can (14 ounces) butter beans, drained and rinsed
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, egg, breadcrumbs, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Mix until just combined, then shape into small bite-sized meatballs.
  2. Heat olive oil in a large skillet or Dutch oven. Brown the meatballs on all sides, then remove and set aside.
  3. Add the diced onion to the same pot and sauté until softened. Stir in the minced garlic and diced bell pepper and cook until tender.
  4. Sprinkle paprika, cumin, and thyme over the vegetables. Stir well to let the spices bloom and release their aroma.
  5. Pour in diced tomatoes, tomato sauce, and vegetable broth. Stir until the mixture simmers gently.
  6. Return the browned meatballs to the pot, letting them nestle into the sauce.
  7. Add the butter beans and continue simmering until the meatballs are fully cooked and the stew thickens slightly.
  8. Adjust seasoning with salt and pepper. Serve warm, garnished with fresh parsley.
