Description

A hearty and comforting Spanish-style stew made with tender beef meatballs simmered in a rich tomato sauce with creamy butter beans, perfect for a cozy and satisfying meal.


Ingredients

  • Ground beef: 500 g
  • Fine breadcrumbs: 60 g
  • Egg: 1 large
  • Garlic: 4 cloves, minced
  • Sweet paprika: 2 teaspoons
  • Ground cumin: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 0.5 teaspoon
  • Olive oil: 3 tablespoons
  • Onion: 1 large, finely chopped
  • Crushed tomatoes: 400 g
  • Butter beans: 400 g cooked, drained
  • Vegetable broth: 500 ml
  • Bay leaf: 1
  • Fresh parsley: 20 g, finely chopped

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, half of the garlic, paprika, cumin, salt, and black pepper until just mixed.
  2. Shape the mixture into evenly sized meatballs, about 4 cm in diameter.
  3. Heat 2 tablespoons of olive oil in a large pot over medium heat and brown the meatballs on all sides, then remove and set aside.
  4. Add the remaining olive oil to the pot and sauté the chopped onion until soft and translucent.
  5. Stir in the remaining garlic and cook briefly until fragrant.
  6. Add the crushed tomatoes, vegetable broth, and bay leaf, stirring to combine.
  7. Return the meatballs to the pot, cover, reduce heat, and simmer gently for 20 minutes.
  8. Add the butter beans and continue to cook uncovered for another 10 minutes until the sauce thickens slightly.
  9. Remove the bay leaf, sprinkle with fresh parsley, and let rest for 5 minutes before serving.

Notes

  • Gently mix the meatball ingredients to keep them tender.
  • Brown the meatballs well to develop deeper flavor.
  • Simmer gently to prevent the meatballs from breaking apart.
  • Add beans near the end to keep them creamy.
