Description

  • 2 packs ramen noodles (about 170g each)
  • 6 cloves garlic, minced
  • 2 fresh red chilies, finely chopped (or 1 tablespoon chili flakes)
  • 1/2 cup heavy cream
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons olive oil or neutral oil
  • 2 tablespoons fresh parsley or cilantro, chopped
  • Salt and black pepper, to taste

Instructions

  1. Bring a medium pot of salted water to a boil and cook the ramen noodles according to package instructions, pulling them out about 30 seconds before fully done.
  2. Reserve about 1/2 cup of the noodle water, then drain the rest and set the noodles aside.
  3. Heat the olive oil in a large nonstick skillet or wok over medium heat.
  4. Add the minced garlic and chopped red chili, stirring constantly for about 1 minute until fragrant but not browned.
  5. Stir in the tomato paste and cook for another minute, allowing it to deepen in color slightly.
  6. Pour in the broth and soy sauce, stirring to combine and bring to a gentle simmer.
  7. Reduce the heat to low and stir in the heavy cream, mixing until the sauce turns a creamy orange red color.
  8. Season the sauce with salt and black pepper to taste, adjusting spice level with more chili if desired.
  9. Add the cooked noodles directly into the skillet with the sauce.
  10. Using tongs, toss the noodles thoroughly, coating every strand evenly in the sauce.
  11. If the sauce feels too thick, add a splash of the reserved noodle water until silky.
  12. Sprinkle the chopped parsley or cilantro over the noodles and toss gently once more.
  13. Serve immediately while hot and glossy.

Notes

  • Reduce or omit fresh chili for a milder version.
  • Add shrimp, chicken, or tofu for extra protein.
  • Udon noodles can be substituted if ramen is unavailable.
  • Sauce can be made up to 2 days ahead and reheated before tossing with noodles.
