- 2 packs ramen noodles
- 200 grams sausage, sliced
- 2 fresh jalapenos, sliced
- 1 small onion, diced
- 1 small red bell pepper, chopped
- 2 large eggs
- 3 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 to 2 tablespoons chili oil
- 1 tablespoon vegetable oil
Instructions
- Bring a pot of water to a boil and cook ramen noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned and slightly crispy.
- Stir in diced onion, minced garlic, and chopped red bell pepper, cook until softened.
- Add sliced jalapenos and cook for another minute.
- Add cooked noodles to the skillet, pour in soy sauce and chili oil, and toss until evenly coated and heated through.
- In a separate pan, fry the eggs until the whites are set and yolks remain runny.
- Serve noodles in bowls, top with fried egg, and enjoy immediately.
Notes
- Adjust chili oil based on your spice preference.
- Do not overcook the noodles to keep a good texture.
- Add a splash of noodle water if the mixture feels dry.
- Fresh jalapenos provide the best flavor and heat.
