- 12 ounces fettuccine pasta
- 1 pound sirloin steak
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until just shy of al dente. Reserve 1/2 cup of pasta water before draining.
- Season steak with salt and pepper. In a hot skillet with olive oil, sear the steak for 3–4 minutes per side. Remove and let it rest.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Pour in the cream and bring to a simmer. Stir in parmesan cheese and mix until smooth.
- Add cooked pasta and reserved pasta water to the sauce. Toss until evenly coated and creamy.
- Slice the rested steak and layer over the pasta.
- Garnish with fresh parsley and serve hot.
Notes
- Use freshly grated parmesan for best texture.
- Resting the steak helps retain its juices.
- Adjust sauce thickness with more or less pasta water.
- For extra flavor, add a pinch of crushed red pepper.
