Description

Ingredients

  • 12 ounces fettuccine pasta
  • 1 pound sirloin steak
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until just shy of al dente. Reserve 1/2 cup of pasta water before draining.
  2. Season steak with salt and pepper. In a hot skillet with olive oil, sear the steak for 3–4 minutes per side. Remove and let it rest.
  3. In the same skillet, melt butter and sauté garlic until fragrant.
  4. Pour in the cream and bring to a simmer. Stir in parmesan cheese and mix until smooth.
  5. Add cooked pasta and reserved pasta water to the sauce. Toss until evenly coated and creamy.
  6. Slice the rested steak and layer over the pasta.
  7. Garnish with fresh parsley and serve hot.

Notes

  • Use freshly grated parmesan for best texture.
  • Resting the steak helps retain its juices.
  • Adjust sauce thickness with more or less pasta water.
  • For extra flavor, add a pinch of crushed red pepper.
