- 1/2 cup breadcrumbs
- 1 large egg
- 3 garlic cloves, minced
- 1/4 cup soy sauce
- 3 tablespoons honey
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon sesame seeds
- 2 green onions, chopped
- 2 cups broccoli florets
- 2 cups cooked white rice
Instructions
- Preheat oven to 400°F or heat a large skillet over medium heat.
- In a bowl, combine ground chicken, breadcrumbs, egg, and minced garlic until just mixed.
- Lightly grease a pan or line a baking sheet with parchment paper.
- Shape mixture into evenly sized meatballs and place them on the prepared surface.
- Cook for 15 to 20 minutes until fully cooked and lightly browned.
- In a pan, combine soy sauce, honey, sesame oil, rice vinegar, and cornstarch slurry, simmer until thickened.
- Toss cooked meatballs in the sauce until evenly coated.
- Serve over rice with steamed broccoli, then top with sesame seeds and green onions.
Notes
- Do not overmix the meatball mixture to keep them tender.
- Adjust sweetness by adding less or more honey to taste.
- Steam broccoli until just tender for best texture.
- Let the sauce fully thicken before adding meatballs.
