- 8 oz dry noodles
- 1 lb boneless chicken thighs, cut into bite-sized pieces
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons brown sugar
- 3 garlic cloves, minced
- 1 tablespoon cornstarch
- 1 tablespoon rice vinegar
- 2 stalks green onions, chopped
- 1 tablespoon toasted sesame seeds
Instructions
- Set a large skillet or wok over medium-high heat.
- In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, rice vinegar, and cornstarch until smooth.
- Add a bit of oil to the hot skillet, then cook chicken pieces for 6–8 minutes until browned and cooked through.
- Cook noodles according to package instructions. Drain and set aside.
- Add the cooked noodles to the skillet with chicken.
- Pour the sauce over and toss well. Let simmer for 2–3 minutes until thickened and glossy.
- Top with chopped green onions and toasted sesame seeds.
- Serve hot and enjoy.
Notes
- Use low-sodium soy sauce to reduce saltiness.
- For extra crunch, toss in some sautéed veggies like bell peppers or snap peas.
