Description

Tender bell peppers filled with a savory mixture of ground beef, rice, tomatoes, and herbs, then baked until perfectly soft and topped with melted mozzarella cheese. A comforting and colorful family dinner that is hearty, satisfying, and easy to prepare.

  • 4 large bell peppers, tops removed and seeds cleaned out
  • 1 pound lean ground beef
  • 1 cup cooked white rice
  • 1 cup canned diced tomatoes, drained
  • 1 cup tomato sauce
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for about 3 minutes until soft, then add garlic and cook for 30 seconds.
  3. Add ground beef and cook for 6 to 8 minutes until browned. Drain excess fat.
  4. Stir in cooked rice, diced tomatoes, tomato sauce, salt, black pepper, and Italian seasoning. Simmer for 5 minutes until well combined.
  5. Arrange hollowed bell peppers upright in the prepared baking dish.
  6. Spoon the beef and rice mixture evenly into each pepper, packing gently. Top each with shredded mozzarella cheese.
  7. Cover loosely with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until peppers are tender and cheese is melted and lightly golden.
  8. Let rest for 5 minutes before serving.

Notes

  • For softer peppers, parboil them for 5 minutes before stuffing.
  • You can substitute ground turkey or chicken for a lighter option.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze individually for up to 2 months and reheat in the oven until warmed through.
