Sticky, saucy, and bursting with flavor, this Sweet Chili Chicken is a fast and delicious weeknight meal that pairs perfectly with rice and broccoli.

- 1 ½ pounds boneless chicken thighs, cut into bite-sized pieces
- 3 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- ½ cup sweet chili sauce
- 2 tablespoons soy sauce
- 3 cups cooked white rice
- 2 cups fresh broccoli, steamed
Instructions
- Pat the chicken dry and toss it with cornstarch in a large bowl until well coated.
- Heat vegetable oil in a large skillet over medium-high heat until hot.
- Cook chicken in a single layer for 2–3 minutes on each side until golden and cooked through. Remove and set aside.
- Lower heat to medium. Add garlic and ginger to the skillet and sauté for 1 minute.
- Add sweet chili sauce and soy sauce. Stir to combine and let simmer.
- Return chicken to skillet and toss to coat with sauce. Let cook for 2 minutes until sauce thickens.
- Steam broccoli until bright green and tender, about 3–4 minutes.
- Serve chicken over rice with broccoli on the side. Garnish if desired.
Notes
- Use chicken thighs for the juiciest texture and best flavor.
- Adjust heat by adding sriracha or red pepper flakes to the sauce.
- Double the sauce if you love extra to drizzle over rice.
- Frozen broccoli can be used if fresh isn’t available.
