- 2 cups shredded coconut
- 8 ounces cream cheese

Instructions
- Preheat the oven to 350°F and lightly grease and flour a round cake pan.
- In a medium bowl, whisk together the all purpose flour, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the coconut milk and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is smooth.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely on a rack.
- In a bowl, beat the cream cheese and powdered sugar until smooth to make the frosting.
- Spread the frosting over the cooled cake.
- Coat the outside of the cake evenly with the shredded coconut, then slice and serve.
Notes
- Bring the butter, eggs, and cream cheese to room temperature before starting for a smoother batter and frosting.
