Description

  • 2 1/2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • 2 cups shredded coconut
  • 8 ounces cream cheese
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and lightly grease and flour a round cake pan.
  2. In a medium bowl, whisk together the all purpose flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the coconut milk and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is smooth.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely on a rack.
  10. In a bowl, beat the cream cheese and powdered sugar until smooth to make the frosting.
  11. Spread the frosting over the cooled cake.
  12. Coat the outside of the cake evenly with the shredded coconut, then slice and serve.
