Description

A vibrant and nourishing quinoa salad packed with turmeric infused quinoa, tender edamame, crunchy purple cabbage, creamy avocado, and fresh herbs tossed in a bright lemon dressing. Perfect for meal prep, healthy lunches, or a colorful side dish.


Ingredients

  • 1 cup uncooked quinoa, rinsed well
  • 2 cups water
  • 1 teaspoon ground turmeric
  • 1 1/2 cups cooked shelled edamame
  • 2 cups shredded purple cabbage
  • 1 large avocado, diced
  • 3 green onions, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse the quinoa thoroughly using a fine mesh strainer.
  2. Add quinoa, water, and turmeric to a medium saucepan and stir gently.
  3. Bring to a boil over medium-high heat, then reduce heat to low and cover.
  4. Cook for 15 minutes until the liquid is absorbed. Let rest for 5 minutes, then fluff with a fork and cool slightly.
  5. In a large mixing bowl, combine cooked quinoa, edamame, purple cabbage, green onions, cilantro, and mint.
  6. In a small bowl, whisk together olive oil, lemon juice, maple syrup, garlic, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently until combined.
  8. Fold in diced avocado just before serving.
  9. Serve immediately or chill before serving for deeper flavor.

Notes

  • Rinse quinoa well to remove bitterness and improve texture.
  • Add avocado right before serving to keep it fresh and vibrant.
  • The salad tastes even better after chilling for 20 minutes.
  • Store leftovers in an airtight container for up to 3 days.
