- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 3 cups fresh spinach leaves
- 1 cup heavy cream
- 1/2 cup parmesan cheese, freshly grated
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season salmon with salt and pepper, then sear in the skillet for 4–5 minutes per side. Remove and set aside.
- In the same pan, sauté garlic for 30 seconds, then add sun-dried tomatoes and Italian seasoning.
- Pour in heavy cream and let simmer for 2 minutes.
- Stir in parmesan and spinach. Let the spinach wilt and the cheese melt.
- Return salmon to the pan and simmer gently for 3–4 minutes until heated through.
- Adjust seasoning and serve warm over your favorite base.
