Description

Creamy Tuscan Salmon is a quick and flavorful dish featuring pan-seared salmon fillets in a rich garlic parmesan cream sauce with spinach and sun-dried tomatoes. Perfect for a cozy weeknight dinner or a special occasion.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach leaves
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season salmon with salt and pepper, then sear in the skillet for 4–5 minutes per side. Remove and set aside.
  3. In the same pan, sauté garlic for 30 seconds, then add sun-dried tomatoes and Italian seasoning.
  4. Pour in heavy cream and let simmer for 2 minutes.
  5. Stir in parmesan and spinach. Let the spinach wilt and the cheese melt.
  6. Return salmon to the pan and simmer gently for 3–4 minutes until heated through.
  7. Adjust seasoning and serve warm over your favorite base.
