- 1 cup uncooked white rice
- 1 large cucumber, sliced

- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 whole lime, juiced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the air fryer to 400°F.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
- Brush the salmon fillets with olive oil and season with salt and black pepper.
- Place the salmon in the air fryer basket in a single layer.
- Cook for 8 to 10 minutes until the salmon is cooked through and slightly crisp.
- In a separate bowl, toss sliced cucumber and red onion with a squeeze of lime and a pinch of salt.
- Cook the white rice according to package instructions.
- Assemble bowls with rice, salmon, drizzle with sauce, and add cucumber salad on the side. Serve and enjoy.
