Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.

- In another bowl, mix granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Combine wet and dry ingredients until a thick dough forms.
- Chill the dough in the refrigerator for at least 30 minutes.
- Scoop dough into small balls and roll each one in powdered sugar.
- Place on the baking sheet with space between each cookie.
- Bake for 10 to 12 minutes until the tops crack.
- Cool slightly on the tray, then transfer to a rack.
