- 4 green onions, thinly sliced

- 1 cup fresh spinach (packed)
- 1/4 cup chives
- 2 cloves garlic
- Juice of 1 lemon
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 3 tablespoons nutritional yeast
- 1/4 cup walnuts
- 1/2 teaspoon salt (or to taste)
Instructions
- In a blender, combine basil, spinach, chives, garlic, lemon juice, olive oil, rice vinegar, walnuts, nutritional yeast, and salt. Blend until smooth and creamy.
- In a large mixing bowl, add chopped cabbage, cucumber, and green onions.
- Pour the dressing over the chopped veggies and toss well to combine.
- Taste and adjust seasoning with more salt or lemon if needed.
- Let sit for 10 minutes to let the flavors mingle before serving.
