Description

A crunchy, creamy, and herb-packed chopped salad tossed in a vibrant green goddess dressing. Perfect as a side, dip, or light meal.


Ingredients

  • 1 small head green cabbage, finely chopped
  • 1 large cucumber, finely diced
  • 4 green onions, thinly sliced
  • 1 cup fresh basil (packed)
  • 1 cup fresh spinach (packed)
  • 1/4 cup chives
  • 2 cloves garlic
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 3 tablespoons nutritional yeast
  • 1/4 cup walnuts
  • 1/2 teaspoon salt (or to taste)

Instructions

  1. In a blender, combine basil, spinach, chives, garlic, lemon juice, olive oil, rice vinegar, walnuts, nutritional yeast, and salt. Blend until smooth and creamy.
  2. In a large mixing bowl, add chopped cabbage, cucumber, and green onions.
  3. Pour the dressing over the chopped veggies and toss well to combine.
  4. Taste and adjust seasoning with more salt or lemon if needed.
  5. Let sit for 10 minutes to let the flavors mingle before serving.
