Description
Creamy whipped feta topped with blistered roasted cherry tomatoes, garlic, and fresh herbs, served with crusty toasted bread. A rich yet refreshing appetizer that’s ready in under 30 minutes.

- 200 grams feta cheese, crumbled
- 100 grams cream cheese, softened
- 2 cups cherry tomatoes
- 3 tablespoons olive oil
- 3 garlic cloves, unpeeled
- 3–4 sprigs fresh thyme
- Handful fresh basil, torn
- Black pepper, to taste
- 1 teaspoon honey (optional)
- Toasted bread slices, for serving
Instructions
- Preheat oven to 400°F (200°C) and line a baking dish or pan.
- Toss cherry tomatoes with olive oil, garlic cloves, thyme, and black pepper. Spread on the baking dish.
- Roast for 20–25 minutes until tomatoes blister and garlic softens.
- While roasting, blend feta, cream cheese, and honey (if using) in a food processor until smooth.
- Spread whipped feta in a shallow dish or plate.
- Spoon warm roasted tomatoes over the whipped feta, removing or mashing the garlic as desired.
- Drizzle with additional olive oil, sprinkle with torn basil, and serve with toasted bread.
Notes
- Use block feta for the best creamy texture.
- The whipped feta can be made 2–3 days in advance.
- Add chili flakes for a spicy kick if desired.
- Let cream cheese fully soften before blending for smooth results.
