Description

Creamy whipped feta topped with blistered roasted cherry tomatoes, garlic, and fresh herbs, served with crusty toasted bread. A rich yet refreshing appetizer that’s ready in under 30 minutes.


Ingredients

  • 200 grams feta cheese, crumbled
  • 100 grams cream cheese, softened
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 3 garlic cloves, unpeeled
  • 34 sprigs fresh thyme
  • Handful fresh basil, torn
  • Black pepper, to taste
  • 1 teaspoon honey (optional)
  • Toasted bread slices, for serving

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking dish or pan.
  2. Toss cherry tomatoes with olive oil, garlic cloves, thyme, and black pepper. Spread on the baking dish.
  3. Roast for 20–25 minutes until tomatoes blister and garlic softens.
  4. While roasting, blend feta, cream cheese, and honey (if using) in a food processor until smooth.
  5. Spread whipped feta in a shallow dish or plate.
  6. Spoon warm roasted tomatoes over the whipped feta, removing or mashing the garlic as desired.
  7. Drizzle with additional olive oil, sprinkle with torn basil, and serve with toasted bread.

Notes

  • Use block feta for the best creamy texture.
  • The whipped feta can be made 2–3 days in advance.
  • Add chili flakes for a spicy kick if desired.
  • Let cream cheese fully soften before blending for smooth results.
