Creamy whipped ricotta swirled with garlic and herb-infused olive oil, served with toasted baguette slices. A quick, elegant dip that’s perfect for any gathering or cozy night in.
Ingredients
Scale
- 1 ½ cups whole milk ricotta cheese
- ⅓ cup olive oil
- 2 garlic cloves, thinly sliced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme leaves
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Zest from ½ lemon
- 1 baguette, thinly sliced and toasted
Instructions
- Preheat oven to 375°F (190°C) if toasting baguette slices.
- In a food processor, whip ricotta cheese with salt, black pepper, and lemon zest for about 2 minutes until smooth and airy.
- In a small saucepan, heat olive oil over medium-low heat. Add garlic, thyme, and red pepper flakes. Let it gently bubble for 2–3 minutes, then remove from heat. Stir in chopped parsley.
- Spoon the whipped ricotta into a shallow serving bowl and create soft swirls with the back of a spoon.
- Drizzle the warm garlic and herb oil over the ricotta, ensuring even distribution of herbs and garlic slices.
- Sprinkle with additional red pepper flakes or herbs if desired and serve with toasted baguette slices.
Notes
- For extra creamy texture, strain ricotta if it appears watery before whipping.
- Use fresh herbs for the best flavor and vibrant color.
- Let the dip come to room temperature before serving for maximum flavor.
- Store leftovers in the fridge for up to 3 days in an airtight container.
