Ingredients

  • 1 ½ cups whole milk ricotta cheese
  • ⅓ cup olive oil
  • 2 garlic cloves, thinly sliced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Zest from ½ lemon
  • 1 baguette, thinly sliced and toasted

Instructions

  1. Preheat oven to 375°F (190°C) if toasting baguette slices.
  2. In a food processor, whip ricotta cheese with salt, black pepper, and lemon zest for about 2 minutes until smooth and airy.
  3. In a small saucepan, heat olive oil over medium-low heat. Add garlic, thyme, and red pepper flakes. Let it gently bubble for 2–3 minutes, then remove from heat. Stir in chopped parsley.
  4. Spoon the whipped ricotta into a shallow serving bowl and create soft swirls with the back of a spoon.
  5. Drizzle the warm garlic and herb oil over the ricotta, ensuring even distribution of herbs and garlic slices.
  6. Sprinkle with additional red pepper flakes or herbs if desired and serve with toasted baguette slices.

  • For extra creamy texture, strain ricotta if it appears watery before whipping.
