- ½ cup unsalted butter, melted
- 1 cup light brown sugar
- ¼ cup granulated sugar
- ½ cup biscoff spread
- 2 large eggs
- 1 teaspoon vanilla extract
- 1¼ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup white chocolate chips
- 6–8 Lotus Biscoff cookies, crushed
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, biscoff spread, eggs, and vanilla until smooth.
- Add the flour, baking powder, and salt. Stir until just combined, being careful not to overmix.
- Fold in the white chocolate chips and half of the crushed Lotus cookies.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining crushed cookies over the batter.
- Bake for 25–30 minutes, or until the center is set and the edges are golden brown.
- Let the blondies cool completely in the pan before slicing into squares and serving.
Notes
- Do not overbake to keep the center chewy.
- Let cool fully before cutting for clean slices.
- Store in an airtight container at room temperature for up to 4 days.
- Freeze leftovers in a single layer for longer storage.
