Description

A creamy and comforting white lasagna layered with tender greens, rich gruyere cheese, and fragrant garlic, baked until bubbly and golden for a cozy yet elegant vegetarian meal.


Ingredients

  • Lasagna noodles: 12 sheets
  • Butter: 3 tablespoons
  • All-purpose flour: 3 tablespoons
  • Whole milk: 3 cups
  • Heavy cream: 1 cup
  • Garlic: 5 cloves, finely minced
  • Mixed greens (spinach, kale, or chard): 6 cups, chopped
  • Gruyere cheese: 2 cups, freshly grated
  • Ricotta cheese: 1 1/2 cups
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Nutmeg: 1/4 teaspoon
  • Fresh parsley: 2 tablespoons, chopped

Instructions

  1. Cook the lasagna noodles in salted boiling water until just tender, then drain and set aside.
  2. Melt the butter in a large saucepan over medium heat, add the flour, and whisk constantly for 1 minute until smooth.
  3. Slowly whisk in the milk and heavy cream, then simmer gently until the sauce thickens and becomes velvety.
  4. Stir in the garlic, salt, black pepper, and nutmeg, cooking until fragrant.
  5. Add the chopped greens and cook until wilted and tender, then remove from heat.
  6. Preheat the oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
  7. Spread a thin layer of sauce in the dish, add a layer of noodles, dollops of ricotta, more sauce, and a sprinkle of gruyere.
  8. Repeat the layers until all ingredients are used, finishing with sauce and gruyere on top.
  9. Cover loosely with foil and bake for 30 minutes, then uncover and bake for 10 minutes until golden and bubbly.
  10. Let the lasagna rest for 10 minutes before slicing and serving.
