Description

Instructions

  1. Place a Dutch oven with its lid inside the oven and preheat to 450°F (230°C) for at least 30 minutes before baking.
  2. In a large mixing bowl, stir together the flour, active dry yeast, and salt. Pour in the warm water and mix until a shaggy, sticky dough forms.
  3. Cover the bowl with a clean kitchen towel and let the dough rise at room temperature for 12 to 18 hours, until doubled in size and bubbly.
  4. Lightly flour a work surface and gently shape the dough into a round without overworking it.
  5. Carefully remove the hot Dutch oven from the oven. Place the dough inside, using parchment paper if desired, and cover with the lid.
  6. Bake covered for 30 minutes. Remove the lid and bake for an additional 10 to 15 minutes, until the crust is deep golden brown.
  7. Remove the bread from the pot and cool on a wire rack for at least 30 minutes before slicing and serving.

  • For a chewier texture, substitute bread flour for all-purpose flour in the same quantity.
