  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 3/4 cup creamy peanut butter, divided
  • 3/4 cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and lightly grease a 24-cup mini muffin pan.
  2. In a medium bowl, whisk together the melted 1/2 cup butter and granulated sugar until glossy. Add the eggs and vanilla extract, then whisk until smooth.
  3. Stir in the cocoa powder, flour, and salt just until combined and no dry streaks remain.
  4. Spoon the brownie batter evenly into the mini muffin cups, filling each about two-thirds full.
  5. Bake for 10 to 12 minutes, until the tops are set and a toothpick inserted near the edge comes out with a few moist crumbs.
  6. Let the brownie cups cool in the pan for 10 minutes. Gently press the centers if needed to create a slight nest shape, then transfer to a rack to cool completely.
  7. In a small bowl, mix 3/4 cup peanut butter, powdered sugar, and the softened 2 tablespoons butter until smooth. Scoop and roll into small rounded portions.
  8. Place one rounded peanut butter portion on top of each cooled brownie cup.
  9. Melt the semisweet chocolate chips in short bursts, stirring until smooth, then drizzle over the tops.
